Mushroom Swiss Meatloaf Sliders

Servings: 12 sliders

For the Meatloaf:

1 lb ground beef

1/2 lb ground pork

1/2 cup breadcrumbs

1/4 cup milk

1 egg, beaten

1 cup finely chopped mushrooms

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded Swiss cheese

1 teaspoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

For the Sliders:

12 slider buns

12 slices Swiss cheese

1 cup sautéed mushrooms

1/4 cup mayonnaise

2 tablespoons Dijon mustard

Lettuce leaves (optional)

Tomato slices (optional)

Instructions:

Preheat your oven to 375°F (190°C).

​

In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, beaten egg, chopped mushrooms, chopped onion, minced garlic, shredded Swiss cheese, Worcestershire sauce, salt, black pepper, and dried thyme. Mix until well combined.

​

Shape the meat mixture into a loaf and place it in a greased loaf pan.

​

Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).

​

Let the meatloaf rest for 10 minutes before slicing.

​

While the meatloaf is baking, sauté additional mushrooms until tender and lightly browned.

​

In a small bowl, mix together the mayonnaise and Dijon mustard.

​

Slice the slider buns and lightly toast them.

​

Spread the mayonnaise and mustard mixture on the bottom half of each slider bun.

​

Place a slice of Swiss cheese on the bottom half of each bun.

​

Slice the meatloaf into 12 even pieces and place one piece on each bun.

​

Top each meatloaf slice with sautéed mushrooms.

​

Add lettuce and tomato slices if desired.

​

Place the top half of the buns on the sliders.

​

Serve the sliders warm!!
